- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Cut the zucchini in half lengthwise and scoop out the center using a spoon to create boats. Place the zucchini halves in a baking dish.
- Step 3: In a skillet over medium heat, add the ground beef and cook until browned. Drain excess fat if necessary.
- Step 4: Add the chopped onion and minced garlic to the skillet with the beef. Sauté until the onion is translucent.
- Step 5: Stir in the marinara sauce, Italian seasoning, salt, and pepper. Simmer for about 5 minutes.
- Step 6: Spoon the beef mixture into the zucchini boats, packing them generously.
- Step 7: Top each filled zucchini boat with shredded mozzarella cheese.
- Step 8: Bake in the preheated oven for 20 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
- Step 9: Remove from the oven and let cool for a few minutes. Garnish with fresh basil or parsley if desired.
- Step 10: Serve warm and enjoy!
