For the Applesauce Zucchini Cake Bars
  • 2 cups grated zucchini about 2 medium zucchinis
  • 1 cup unsweetened applesauce
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1/2 cup vegetable oil
  • 2 large eggs Acts as a binder.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans optional
  • 1/2 cup raisins or chocolate chips optional

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easy removal.
  2. Step 2: In a large mixing bowl, combine the grated zucchini, applesauce, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
  3. Step 3: In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  4. Step 4: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  5. Step 5: If desired, fold in the chopped nuts and raisins or chocolate chips for an extra touch.
  6. Step 6: Pour the batter into the prepared baking pan and spread it evenly.
  7. Step 7: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Step 8: Remove from the oven and let cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely before cutting into bars.
