- Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easy removal.
- Step 2: In a large mixing bowl, combine the grated zucchini, applesauce, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
- Step 3: In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- Step 4: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Step 5: If desired, fold in the chopped nuts and raisins or chocolate chips for an extra touch.
- Step 6: Pour the batter into the prepared baking pan and spread it evenly.
- Step 7: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Step 8: Remove from the oven and let cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely before cutting into bars.
