- Step 1: Hard boil the eggs: Place the eggs in a pot and cover them with water. Bring to a boil over medium heat. Once boiling, cover the pot, remove it from heat, and let sit for 12-14 minutes. Afterward, transfer the eggs to an ice bath to cool.
- Step 2: Prepare the filling: Once the eggs are cool, peel them and cut them in half lengthwise. Remove the yolks and place them in a mixing bowl.
- Step 3: Mash the avocado: Add the ripe avocado to the bowl with the egg yolks. Use a fork to mash the yolks and avocado together until smooth.
- Step 4: Mix ingredients: Stir in the lime juice, Dijon mustard, garlic powder, salt, and pepper until well combined and creamy.
- Step 5: Fill the egg whites: Spoon or pipe the avocado mixture back into the egg white halves.
- Step 6: Garnish: Sprinkle with paprika and add fresh cilantro or chives if desired.
- Step 7: Serve: Enjoy your delicious avocado deviled eggs as a healthy snack or appetizer!
Notes
To keep your Avocado Deviled Eggs fresh, store them in an airtight container in the refrigerator. They are best enjoyed within 1-2 days. If you’re preparing them for a party, I recommend filling the eggs just before serving to prevent browning!
