Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

  3. Step 3: In a mixing bowl, beat the heavy whipping cream with an electric mixer on medium speed until it begins to thicken. Add the powdered sugar and vanilla extract, then continue to beat until stiff peaks form.
  4. Step 4: Once the cakes are completely cooled, place one layer on a serving plate. Spoon half of the strawberry mixture over the cake layer, allowing some juices to soak in. Spread a layer of whipped cream over the strawberries. Place the second cake layer on top and repeat the process with the remaining strawberries and whipped cream. Decorate the top with additional strawberries and a dollop of whipped cream, if desired.
