- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Cut the zucchinis in half lengthwise and scoop out the center using a spoon, leaving about 1/4 inch of the flesh intact to create a boat shape.
- Step 3: In a mixing bowl, combine the cooked quinoa, diced tomatoes, black beans, corn, chili powder, garlic powder, cumin, salt, and pepper. Mix well until all ingredients are incorporated.
- Step 4: Spoon the quinoa mixture into each zucchini boat, packing it gently to fill them completely.
- Step 5: Place the stuffed zucchini boats on a baking sheet lined with parchment paper.
- Step 6: Sprinkle the shredded cheese evenly over the top of each stuffed zucchini.
- Step 7: Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.
- Step 8: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro if desired.
