Ingredients
  

For the Zucchini Boats
  • 4 medium zucchinis these will be the star of the show!
  • 1 cup cooked quinoa a healthy, protein-packed base.
  • 1 cup diced tomatoes canned or fresh
  • 1 cup black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 tsp chili powder brings a warm spice
  • 1 tsp garlic powder because everything is better with garlic!
  • 1 tsp cumin adds a lovely depth of flavor.
  • to taste salt and pepper seasoning is key!
  • 1 cup shredded cheese cheddar, mozzarella, or your choice
  • for garnish fresh cilantro optional

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: Cut the zucchinis in half lengthwise and scoop out the center using a spoon, leaving about 1/4 inch of the flesh intact to create a boat shape.
  3. Step 3: In a mixing bowl, combine the cooked quinoa, diced tomatoes, black beans, corn, chili powder, garlic powder, cumin, salt, and pepper. Mix well until all ingredients are incorporated.
  4. Step 4: Spoon the quinoa mixture into each zucchini boat, packing it gently to fill them completely.
  5. Step 5: Place the stuffed zucchini boats on a baking sheet lined with parchment paper.
  6. Step 6: Sprinkle the shredded cheese evenly over the top of each stuffed zucchini.
  7. Step 7: Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.
  8. Step 8: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro if desired.
