- Step 1: If using fresh corn, shuck the corn and carefully remove the kernels from the cob with a sharp knife. You should have about 2 cups of corn kernels.
- Step 2: In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, baking soda, salt, black pepper, and paprika. Stir until well blended.
- Step 3: In another bowl, whisk together the buttermilk and eggs until smooth.
- Step 4: Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the corn kernels, chopped cilantro, and feta cheese if you’re using it.
- Step 5: In a large skillet or on a Blackstone griddle, heat about 1/4 inch of vegetable oil over medium heat until shimmering.
- Step 6: Using a 1/4 cup measuring cup, scoop the batter and carefully drop it into the hot oil. Flatten slightly with the back of the cup. Cook for 3-4 minutes on each side, or until they are golden brown and crispy.
- Step 7: Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil. Serve warm with your favorite dipping sauce or salsa.
Notes
To store your fritters, simply place them in an airtight container in the fridge. They will last for about 3 days. When you're ready to enjoy them again, reheat in the oven at 350°F for about 10 minutes to get that crispiness back. You can also freeze them for up to a month; just make sure to layer them with parchment paper to prevent sticking.
