- Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Step 2: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and bourbon until well combined.
- Step 3: In a separate bowl, whisk together the flour, baking soda, and salt.
- Step 4: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Step 5: Fold in the dark chocolate chunks and crumbled bacon until evenly distributed throughout the dough.
- Step 6: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.
- Step 7: Lightly sprinkle sea salt on top of each cookie before baking.
- Step 8: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may look slightly underbaked but will continue to cook on the baking sheet.
- Step 9: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
To keep your cookies fresh and tasty, store them in an airtight container at room temperature. They will last about 5-7 days. If you want to keep them longer, you can freeze the baked cookies for up to 3 months. Just thaw them at room temperature when you're ready to enjoy!
