- Step 1: In a large bowl, whisk together the vanilla pudding mix and milk until smooth and thickened. Add the softened cream cheese and beat until well combined. Gently fold in the whipped topping until fully incorporated.
- Step 2: In a 9x13 inch baking dish, place a layer of graham crackers on the bottom. Spread half of the pudding mixture over the graham crackers. Sprinkle half of the diced apples on top of the pudding mixture, followed by a drizzle of caramel sauce and a sprinkle of cinnamon.
- Step 3: Add another layer of graham crackers on top of the apples. Spread the remaining pudding mixture over the second layer of graham crackers. Top with the remaining diced apples, another drizzle of caramel sauce, and a sprinkle of cinnamon.
- Step 4: Finish with one last layer of graham crackers on top. Drizzle additional caramel sauce over the top and, if desired, sprinkle with chopped nuts for added crunch.
- Step 5: Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the layers to set and the flavors to meld together.

Once made, this cake can be stored in the refrigerator for up to 3 days. Just make sure to cover it well to keep it fresh. I personally love it a little chilled, as it enhances the flavors even more!
