- Step 1: In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they are tender and golden brown.
- Step 2: Toss in the diced onion and bell pepper to the skillet with the potatoes. Continue to cook for an additional 5-7 minutes, until the vegetables are soft.
- Step 3: In a bowl, crack the eggs and whisk them together with a pinch of salt and pepper.
- Step 4: Pour the whisked eggs over the cooked potato and vegetable mixture in the skillet. Cook, stirring gently, until the eggs are just set, about 3-4 minutes.
- Step 5: Sprinkle the shredded cheddar cheese over the top and cover the skillet for a couple of minutes until the cheese melts.
- Step 6: Remove from heat, garnish with chopped parsley, and serve warm.
Notes
This dish is best enjoyed fresh, but you can store leftovers in an airtight container in the fridge for up to 3 days.
