Method
- Step 1: Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Step 2: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Step 3: Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
- Step 4: In a separate bowl, whisk together the flour, baking soda, and salt.
- Step 5: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Step 6: Gently fold in the semi-sweet chocolate chips and dried cherries until evenly distributed.
- Step 7: Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Step 8: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.
- Step 9: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
To keep your cookies fresh, store them in an airtight container at room temperature for about a week. You can also freeze the cookie dough before baking or freeze the baked cookies.
