  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

  • 1 cup caramel bits or chopped soft caramel candies
  • 1/2 cup chopped walnuts or pecans optional

Equipment

  • Oven
  • Baking Sheet
  • Mixing Bowl
  • Parchment Paper

Method

  1. Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Step 2: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
  3. Step 3: Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Step 4: In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Step 6: Fold in the diced apples, caramel bits, and nuts (if using).
  7. Step 7: Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Step 8: Bake for 12-15 minutes, or until the edges are golden brown.
  9. Step 9: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

To keep your cookies fresh, store them in an airtight container at room temperature for up to 5 days. If you want to keep them longer, you can freeze them in a freezer-safe container for up to 3 months.
