- Step 1: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes.
- Step 2: Stir in the minced garlic and diced poblano peppers. Cook for an additional 3-4 minutes until the peppers soften.
- Step 3: Add the ground cumin and smoked paprika, stirring well to combine. Cook for another minute to release the flavors.
- Step 4: Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 10 minutes.
- Step 5: Add the black beans and corn to the pot. Stir in the shredded chicken and let the soup simmer for another 5 minutes.
- Step 6: Reduce the heat to low and stir in the heavy cream. Allow the soup to warm through but do not let it boil.
- Step 7: Season with salt and pepper to taste.
- Step 8: Serve hot, garnished with fresh cilantro and lime wedges on the side.
Notes
Store any leftovers in an airtight container in the fridge for up to 3 days. You can also freeze the soup for up to 3 months.
