For the Chicken Zucchini Bake
  • 2 medium zucchinis sliced
  • 2 cups cooked chicken shredded
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for greasing

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C). While it's heating, grease a baking dish with a bit of olive oil.
  2. Step 2: In your greased baking dish, layer the sliced zucchinis evenly across the bottom.
  3. Step 3: Spread the shredded chicken over the zucchini layer, ensuring it’s evenly distributed.
  4. Step 4: Pour the marinara sauce over the chicken, ensuring it covers everything nicely.
  5. Step 5: Sprinkle the Italian seasoning, salt, and pepper over the sauce for that extra flavor boost.
  6. Step 6: Top it all off with shredded mozzarella cheese and grated Parmesan cheese.
  7. Step 7: Cover the baking dish with aluminum foil and bake for 25 minutes.
  8. Step 8: After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Step 9: Allow it to cool slightly before serving.

Notes

Leftovers will last in the refrigerator for about 3-4 days. You can also freeze it for up to 2 months.
