  • 2 cloves garlic minced
  • 1 tbsp chili powder the heart of the flavor.
  • 1 tsp cumin adds a warm, earthy taste.
  • 1 tsp paprika for a hint of sweetness and color.
  • 1/2 tsp salt to enhance all the flavors.
  • 1/2 tsp black pepper a little spice goes a long way.
  • 1/4 tsp cayenne pepper optional for extra heat.
  • Fresh cilantro, chopped (for garnish)

Method
 

  1. Step 1: In a medium bowl, whisk together the lime juice, olive oil, minced garlic, chili powder, cumin, paprika, salt, black pepper, and cayenne pepper (if using). This marinade is where the magic begins!
  2. Step 2: Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor. The longer, the better!
  3. Step 3: Preheat your grill to medium-high heat or your oven to 400°F (200°C). This step is crucial for achieving that perfect cook.
  4. Step 4: If grilling, place the marinated chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). If baking, place the chicken on a baking sheet and bake for 20-25 minutes, or until cooked through.
  5. Step 5: Remove the chicken from the grill or oven and let it rest for 5 minutes. Garnish with chopped cilantro before serving.

Notes

Marinate the chicken for at least 30 minutes to soak up those flavors. Store leftovers in an airtight container in the refrigerator for up to 3 days.
