  • 1 large egg yolk
For the Cinnamon Sugar Topping
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Method
 

  1. Step 1: Prepare the Cheesecake Filling: In a mixing bowl, beat together the softened cream cheese, granulated sugar, powdered sugar, vanilla extract, and egg yolk until smooth and creamy. Set it aside.
  2. Step 2: Make the Cookie Dough: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs, one at a time, followed by the vanilla extract, mixing until well combined. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Step 3: Assemble the Cookies: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop out a tablespoon of cookie dough and flatten it into a disk in your hand. Place about a teaspoon of the cheesecake filling in the center of the disk, then fold the edges of the dough over the filling, sealing it completely. Roll the filled dough into a ball and place it on the prepared baking sheet.
