Ingredients

For the Cookies
  • 1 cup granulated sugar the sweet foundation of your cookies.
  • 1/2 cup unsweetened cocoa powder this adds a rich chocolate flavor.
  • 1/2 cup unsalted butter for that creamy texture.
  • 1/2 cup milk helps to bring everything together.
  • 3 cups quick oats these give the cookies their chewy texture.
  • 1/2 cup peanut butter adds a delicious nutty flavor.
  • 1 teaspoon vanilla extract for that warm, comforting aroma.
  • 1 pinch salt enhances all the flavors.

Equipment

  • Medium Saucepan
  • Wax Paper or Silicone Baking Mat

Method

  1. Step 1: In a medium saucepan, combine the granulated sugar, unsweetened cocoa powder, unsalted butter, and milk. Cook over medium heat, stirring constantly until the mixture comes to a boil.
  2. Step 2: Once boiling, let it cook for 1-2 minutes without stirring. This is where the magic happens, so resist the urge to stir!
  3. Step 3: Remove the saucepan from heat and stir in the peanut butter, vanilla extract, and a pinch of salt until smooth and well combined.
  4. Step 4: Add the quick oats to the mixture and stir until the oats are evenly coated.
  5. Step 5: Drop spoonfuls of the mixture onto wax paper or a silicone baking mat.
  6. Step 6: Allow the cookies to cool and set at room temperature for about 30 minutes.

Notes

Store in an airtight container at room temperature for up to a week. You can also refrigerate them for a firmer texture.
