- Step 1: Start by seasoning the chicken breasts with salt and black pepper on both sides.
- Step 2: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until they’re beautifully cooked through. Once done, remove the chicken from the skillet and set it aside.
- Step 3: In the same skillet, toss in the minced garlic and cook for about a minute until it’s fragrant.
- Step 4: Add the halved cherry tomatoes and let them cook for 2-3 minutes until they soften.
- Step 5: Pour in the heavy cream and bring it to a gentle simmer.
- Step 6: Stir in the chopped spinach, grated Parmesan cheese, and Italian seasoning. Cook for another 2-3 minutes until the sauce thickens slightly.
- Step 7: Return the cooked chicken to the skillet, making sure to coat it well in that creamy sauce.
- Step 8: Serve hot, garnished with fresh basil. Enjoy!
Notes
If you happen to have leftovers, let the chicken cool completely before transferring it to an airtight container. It can be stored in the refrigerator for up to 3 days. When you’re ready to enjoy it again, reheat it gently on the stove or in the microwave.
