Ingredients

For the Zucchini Fries
  • 2 medium zucchini These are the star of the show, bringing freshness and a healthy crunch.
  • 1 cup breadcrumbs Panko is recommended for extra crunch.
  • 0.5 cup grated Parmesan cheese Adds a rich, savory flavor.
  • 2 teaspoons garlic powder For that delightful garlic kick.
  • 1 teaspoon onion powder Enhances the overall flavor.
  • 1 teaspoon salt Essential for seasoning.
  • 0.5 teaspoon black pepper Adds a little warmth.
  • 2 large eggs Helps the breadcrumbs stick to the zucchini.
  • 1 tbsp cooking spray or olive oil A drizzle will help them crisp up beautifully.

Equipment

  • Oven
  • Baking Sheet
  • Shallow Bowl
  • Mixing Bowl

Method

  1. Step 1: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Step 2: In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix well to ensure all ingredients are evenly distributed.
  3. Step 3: In another bowl, beat the eggs until well combined.
  4. Step 4: Dip each zucchini fry first into the beaten eggs, allowing any excess to drip off. Then coat it in the breadcrumb mixture, pressing gently to adhere. Place the coated fries on the prepared baking sheet.
  5. Step 5: Once all the zucchini fries are coated, spray them lightly with cooking spray or drizzle with olive oil to help them crisp up in the oven.
  6. Step 6: Bake in the preheated oven for about 20-25 minutes, or until the fries are golden brown and crispy. Flip them halfway through baking for even crispiness.
  7. Step 7: Remove from the oven and let cool slightly before serving. Enjoy your Crispy Garlic Parmesan Zucchini Fries with your favorite dipping sauce!

Notes

If you have any leftovers (which I doubt!), you can store them in an airtight container in the fridge for up to 3 days. To reheat, pop them back into the oven for a few minutes to restore their crispiness.
