Crispy Stuffed Salmon with Spinach and Whipped Feta

Ingredients
  

For the Stuffed Salmon
  • 4 fillets salmon 6 oz each
  • 2 cups fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 1/2 cup cream cheese softened
  • 1/4 cup Greek yogurt
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup breadcrumbs
  • 2 tbsp olive oil
For garnish
  • fresh dill

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a medium bowl, combine the chopped spinach, crumbled feta cheese, cream cheese, Greek yogurt, minced garlic, lemon juice, dried oregano, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
  3. Step 3: Using a sharp knife, make a pocket in each salmon fillet by slicing it horizontally, being careful not to cut all the way through.
  4. Step 4: Generously stuff each salmon pocket with the spinach and feta mixture. You can use a spoon or your hands to ensure it's well packed.
  5. Step 5: In a small bowl, combine the breadcrumbs and olive oil. Mix until the breadcrumbs are evenly coated. Press the breadcrumb mixture onto the top of each stuffed salmon fillet.
  6. Step 6: Place the stuffed salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the top is golden and crispy.
  7. Step 7: Remove from the oven and let the salmon rest for a few minutes. Garnish with fresh dill, if desired. Serve warm.

Notes

If you have leftovers (though I doubt you will!), store them in an airtight container in the fridge for up to 2 days. To reheat, pop them in the oven at 350°F (175°C) for about 10 minutes to regain that crispy topping.
