- Step 1: Place the chicken breasts at the bottom of the crockpot.
- Step 2: Add the uncooked rice, chicken broth, diced onion, diced carrots, frozen peas, minced garlic, thyme, oregano, salt, and pepper on top of the chicken.
- Step 3: Stir gently to combine the ingredients.
- Step 4: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
- Step 5: Once done, shred the chicken in the crockpot using two forks and stir to combine with the rice.
- Step 6: Serve hot, garnished with fresh parsley if desired.
Notes
Leftovers are just as delicious! Cool the chicken and rice completely before transferring to an airtight container. It will last in the fridge for 3-4 days. You can also freeze it for up to 3 months. Just be sure to label it!
