Crockpot Chicken and Rice

There's something incredibly comforting about a warm bowl of chicken and rice, especially when it comes straight from the crockpot. This dish takes me back to family dinners where the aroma of chicken simmering all day would fill the house, making everyone eager to gather around the table.

Ingredients
  

For the Crockpot Chicken and Rice
  • 4 pieces boneless, skinless chicken breasts the star of the dish, they become tender and juicy after simmering.
  • 1 cup uncooked long-grain white rice this absorbs all the delicious flavors while cooking.
  • 4 cups chicken broth adds richness and depth to the dish.
  • 1 cup diced onion for that aromatic base that enhances everything.
  • 1 cup diced carrots they add a pop of color and sweetness.
  • 1 cup frozen peas these are easy to use and add a nice texture.
  • 2 cloves garlic minced, because garlic makes everything better!
  • 1 tsp dried thyme a classic herb that pairs perfectly with chicken.
  • 1 tsp dried oregano for a hint of Mediterranean flavor.
  • to taste salt and pepper essential for bringing all the flavors together.
  • Fresh parsley for garnish (optional)

Method
 

  1. Step 1: Place the chicken breasts at the bottom of the crockpot.
  2. Step 2: Add the uncooked rice, chicken broth, diced onion, diced carrots, frozen peas, minced garlic, thyme, oregano, salt, and pepper on top of the chicken.
  3. Step 3: Stir gently to combine the ingredients.
  4. Step 4: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
  5. Step 5: Once done, shred the chicken in the crockpot using two forks and stir to combine with the rice.
  6. Step 6: Serve hot, garnished with fresh parsley if desired.

Notes

Leftovers are just as delicious! Cool the chicken and rice completely before transferring to an airtight container. It will last in the fridge for 3-4 days. You can also freeze it for up to 3 months. Just be sure to label it!
