  • 8 oz pasta spaghetti or fettuccine
  • 4 oz smoked salmon sliced
  • 1 cup heavy cream
  • 1/2 cup vegetable broth
  • 1 tbsp olive oil for sautéing the garlic
  • 2 cloves garlic minced
  • 1 tbsp capers rinsed and drained
  • 1 tbsp fresh lemon juice for a zesty kick
  • 1 unit zest of 1 lemon enhances the lemon flavor

Method
 

  1. Step 1: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Step 2: In a large skillet over medium heat, add the olive oil and minced garlic. Sauté for about 1 minute, until fragrant and golden.
  3. Step 3: Pour in the heavy cream and vegetable broth. Stir to combine and bring to a gentle simmer.
  4. Step 4: Add the smoked salmon, capers, lemon juice, and lemon zest to the skillet. Stir gently to combine and heat through. Season with salt and pepper to taste.
  5. Step 5: Add the cooked pasta to the skillet with the sauce. Toss everything together until the pasta is well coated with the creamy sauce.
  6. Step 6: Divide the pasta among plates. Garnish with fresh dill or parsley and sprinkle with grated Parmesan cheese if desired.
