Ingredients
  

For the Meringue Cookies
  • 4 large egg whites fresh
  • 1 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • food coloring optional
  • sprinkles optional

Method
 

  1. Step 1: Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper.
  2. Step 2: In a clean, dry mixing bowl, beat the egg whites on medium speed until foamy.
  3. Step 3: Add the cream of tartar and continue to beat until soft peaks form.
  4. Step 4: Gradually add the granulated sugar, one tablespoon at a time, while beating on high speed until stiff peaks form.
  5. Step 5: Mix in the vanilla extract and add food coloring if desired.
  6. Step 6: Using a piping bag or a spoon, drop small dollops of meringue onto the prepared baking sheet.
  7. Step 7: If using, sprinkle the tops with sprinkles.
  8. Step 8: Bake for 1.5 to 2 hours, or until the meringues are dry.
  9. Step 9: Turn off the oven and leave the meringues inside to cool completely.
  10. Step 10: Once cooled, remove from the oven and store in an airtight container.

Notes

Store cookies in an airtight container at room temperature. They’ll stay good for about 1-2 weeks.
