- Step 1: Start by cooking the rotini pasta according to the package instructions. Once cooked, drain it and set it aside. It’s always a good idea to save a little pasta water in case you want to thin the sauce later!
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the bite-sized chicken pieces and sprinkle them with the Cajun seasoning. Cook until the chicken is no longer pink, about 5-7 minutes.
- Step 3: Now, reduce the heat to low. Stir in the heavy cream and Velveeta cheese. Cook until the cheese is melted and the mixture becomes smooth and creamy.
- Step 4: Add the cooked rotini pasta to the skillet and toss to combine. Stir in the grated Parmesan cheese. Season with salt and pepper to taste.
- Step 5: Serve immediately, garnished with chopped parsley for that lovely fresh touch.

Leftovers? No problem! Store any uneaten pasta in an airtight container in the fridge for up to 3 days. Just reheat gently on the stove or in the microwave, adding a splash of milk or cream to loosen the sauce if needed.
