  • 4 pieces boneless, skinless chicken breasts
  • 2 large onions thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 cup beef broth
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1 cup shredded Gruyère cheese
  • to taste salt and pepper for seasoning
  • to taste fresh parsley, chopped for garnish

Method
 

  1. Step 1: Season the chicken breasts with salt, pepper, and garlic powder on both sides.
  2. Step 2: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring frequently, for about 15-20 minutes, or until the onions are caramelized and golden brown.
  3. Step 3: Pour in the beef broth and add the dried thyme. Stir well and let it simmer for an additional 5 minutes.
  4. Step 4: Push the onions to the side of the skillet. Add the seasoned chicken breasts to the center of the skillet. Cover and cook for about 6-7 minutes on each side, or until the chicken is cooked through.
  5. Step 5: Sprinkle the shredded Gruyère cheese over the chicken and cover the skillet. Cook for another 2-3 minutes, or until the cheese is melted and bubbly.
  6. Step 6: Garnish with chopped fresh parsley before serving.

Notes

This dish can be stored in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of broth to keep the chicken moist.
