- Step 1: Season the chicken breasts with salt, pepper, and garlic powder on both sides.
- Step 2: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring frequently, for about 15-20 minutes, or until the onions are caramelized and golden brown.
- Step 3: Pour in the beef broth and add the dried thyme. Stir well and let it simmer for an additional 5 minutes.
- Step 4: Push the onions to the side of the skillet. Add the seasoned chicken breasts to the center of the skillet. Cover and cook for about 6-7 minutes on each side, or until the chicken is cooked through.
- Step 5: Sprinkle the shredded Gruyère cheese over the chicken and cover the skillet. Cook for another 2-3 minutes, or until the cheese is melted and bubbly.
- Step 6: Garnish with chopped fresh parsley before serving.
Notes
This dish can be stored in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of broth to keep the chicken moist.
