- Step 1: Cook the ground beef in a large skillet over medium heat until browned. Drain excess fat.
- Step 2: Add the chopped onion, bell pepper, and minced garlic to the skillet. Sauté until the vegetables are tender.
- Step 3: Stir in the chopped cabbage, diced tomatoes (with juice), kidney beans, chili powder, cumin, salt, and pepper. Cook for about 10-15 minutes, stirring occasionally, until the cabbage is wilted and tender.
- Step 4: Remove from heat and stir in half of the Fritos corn chips and half of the shredded cheddar cheese.
- Step 5: Top with the remaining Fritos and cheese. Cover and let it sit for a few minutes until the cheese is melted.
- Step 6: Serve hot, garnished with optional toppings if desired.
Notes
Store in an airtight container. Reheat on the stovetop or microwave. Can be stored in the refrigerator for 3-4 days or frozen for 2-3 months.
