Ingredients
  

  • 1 medium head Cabbage chopped
  • 1 lb Ground beef Can substitute with ground turkey or chicken.
  • 1 medium Onion chopped, yellow or white onion is preferred.
  • 1 Bell pepper chopped, any color bell pepper adds flavor.
  • 2 cloves Garlic minced, fresh garlic enhances the taste.
  • 1 can (15 oz) Diced tomatoes undrained, use fire-roasted for extra flavor.
  • 1 can (15 oz) Kidney beans drained and rinsed, black beans are a good alternative.
  • 1 tbsp Chili powder adjust to taste for more heat.
  • 1 tsp Cumin adds depth to the flavor.
  • to taste Salt and pepper freshly ground is best.
  • 2 cups Fritos corn chips any corn chip can substitute.
  • 1 cup Shredded cheddar cheese use any favorite cheese.
  • As desired Optional toppings sour cream, green onions, jalapeños add flavor.

Method
 

  1. Step 1: Cook the ground beef in a large skillet over medium heat until browned. Drain excess fat.
  2. Step 2: Add the chopped onion, bell pepper, and minced garlic to the skillet. Sauté until the vegetables are tender.
  3. Step 3: Stir in the chopped cabbage, diced tomatoes (with juice), kidney beans, chili powder, cumin, salt, and pepper. Cook for about 10-15 minutes, stirring occasionally, until the cabbage is wilted and tender.
  4. Step 4: Remove from heat and stir in half of the Fritos corn chips and half of the shredded cheddar cheese.
  5. Step 5: Top with the remaining Fritos and cheese. Cover and let it sit for a few minutes until the cheese is melted.
  6. Step 6: Serve hot, garnished with optional toppings if desired.

Notes

Store in an airtight container. Reheat on the stovetop or microwave. Can be stored in the refrigerator for 3-4 days or frozen for 2-3 months.
