- Step 1: In a bowl, combine minced garlic, olive oil, rosemary, thyme, salt, pepper, and lemon juice to create a marinade.
- Step 2: Place the chicken breasts in the marinade and let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator) to soak up all those flavors.
- Step 3: Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked (internal temperature of 165°F). Remove from heat and let it rest for a few minutes before slicing.
- Step 4: Preheat your oven to 425°F (220°C). In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

If you happen to have leftovers, you can store them in an airtight container in the refrigerator. The chicken and potatoes will last for about 3-4 days. Just reheat the chicken in the oven or microwave, and enjoy your fresh salad cold for a quick lunch!
