- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: In a small bowl, combine minced garlic, olive oil, parsley, dill, lemon juice, salt, and pepper.

- Step 5: While the salmon is baking, toss the halved baby potatoes with olive oil, garlic powder, rosemary, salt, and pepper in a large bowl.
- Step 6: Spread the potatoes in a single layer on a separate baking sheet and roast in the oven for 25-30 minutes, flipping halfway through, until golden brown and tender.
- Step 7: In a medium bowl, combine the diced avocados, cherry tomatoes, and red onion. Drizzle with lime juice and season with salt and pepper. Toss gently to combine.
- Step 8: Once the salmon and potatoes are done, plate the salmon fillets alongside a portion of roasted potatoes and serve the avocado salad on the side for a refreshing complement to the meal.

If you have leftovers, store the salmon and potatoes in an airtight container in the fridge for up to 3 days. It's best to keep the avocado salad separate and eat it the same day for optimal freshness.
