- Step 1: In a large pot, bring water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
- Step 2: If using fresh corn, grill or boil until tender, then cut the kernels off the cob. For frozen corn, just thaw it; if you’re using canned corn, drain and rinse it well.
- Step 3: In a large mixing bowl, combine the cooked pasta, sweet corn, diced red bell pepper, chopped red onion, cilantro, cherry tomatoes, and diced avocado.
- Step 4: In a small bowl, whisk together the lime juice, olive oil, chili powder, garlic powder, salt, and pepper.
- Step 5: Pour the dressing over the pasta salad. Toss gently to ensure all ingredients are evenly coated.
