Ingredients
  

For the Pasta Salad
  • 8 oz whole wheat pasta packed with fiber
  • 2 cups sweet corn fresh, frozen, or canned
  • 1 medium red bell pepper diced
  • 0.5 cup red onion finely chopped
  • 0.25 cup fresh cilantro chopped
  • 0.5 cup cherry tomatoes halved
  • 1 medium avocado diced
  • 1 lime juiced
  • 2 tbsp olive oil adds richness
  • 1 tsp chili powder adds a hint of spice
  • 0.5 tsp garlic powder for aromatic flavor
  • Salt and pepper to taste
  • Crumbled feta cheese (optional)

Method
 

  1. Step 1: In a large pot, bring water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. Step 2: If using fresh corn, grill or boil until tender, then cut the kernels off the cob. For frozen corn, just thaw it; if you’re using canned corn, drain and rinse it well.
  3. Step 3: In a large mixing bowl, combine the cooked pasta, sweet corn, diced red bell pepper, chopped red onion, cilantro, cherry tomatoes, and diced avocado.
  4. Step 4: In a small bowl, whisk together the lime juice, olive oil, chili powder, garlic powder, salt, and pepper.
  5. Step 5: Pour the dressing over the pasta salad. Toss gently to ensure all ingredients are evenly coated.
  6. Step 6: If desired, sprinkle with crumbled feta cheese before serving. Enjoy your Healthy Street Corn Pasta Salad chilled or at room temperature!

Notes
