For the High Protein BBQ Chicken Mac & Cheese
  • 8 oz elbow macaroni
  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 2 cups shredded cheddar cheese
  • 1 cup cottage cheese
  • 1 cup milk
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Cook the elbow macaroni according to the package instructions. Once they are al dente, drain them and set aside.
  3. Step 3: In a large mixing bowl, combine the shredded chicken, BBQ sauce, cheddar cheese, cottage cheese, milk, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well until everything is nicely blended.
  4. Step 4: Add the cooked macaroni to the chicken mixture and stir until it is well combined.
  5. Step 5: Transfer the mixture to a greased baking dish and spread it out evenly.
  6. Step 6: Bake for about 25-30 minutes, or until it is bubbly and golden on top.
  7. Step 7: Let it cool for a few minutes, then garnish with chopped green onions if desired before serving.

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 2 months.
