Ingredients

For the Hobo Foil Packets
  • 1 lb ground beef or your choice of protein
  • 4 medium potatoes diced
  • 4 medium carrots sliced
  • 1 medium bell pepper chopped
  • 1 medium onion chopped
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • to taste salt
  • to taste pepper

Equipment

  • Grill or Oven
  • Aluminum Foil
  • Large Bowl

Method

  1. Step 1: If using a grill, preheat it to medium-high heat. If using an oven, preheat to 400°F (200°C).
  2. Step 2: Cut large pieces of aluminum foil (about 12x12 inches) for each packet.
  3. Step 3: In a large bowl, combine the ground beef, diced potatoes, sliced carrots, chopped bell pepper, and chopped onion. Drizzle with olive oil and season with garlic powder, onion powder, paprika, salt, and pepper. Mix well to combine.
  4. Step 4: Divide the mixture evenly among the prepared foil pieces. Fold the foil over the mixture to create a sealed packet, making sure there are no openings.
  5. Step 5: Place the foil packets on the grill or in the oven. Cook for about 25-30 minutes, flipping halfway through, until the meat is cooked through and the vegetables are tender.
  6. Step 6: Carefully open the packets (watch out for steam!), and serve hot. Enjoy your delicious and easy hobo foil packets!

Notes

If you have leftovers, store the packets in the refrigerator for up to 3 days. To reheat, simply place them back on the grill or in the oven until heated through.
