- Step 1: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, beat the eggs and then add the milk and vanilla extract. Combine the wet ingredients with the dry ingredients, mixing until smooth and well combined.
- Step 2: In a deep skillet or frying pan, pour in enough vegetable oil to reach a depth of about 2 inches. Heat the oil over medium heat until it reaches 350°F (175°C).
- Step 3: Using a funnel or a squeeze bottle, carefully pour the batter into the hot oil in a circular, spiral motion, creating a lace-like pattern. Fry for about 2-3 minutes on one side, or until golden brown. Carefully flip the funnel cake and fry for an additional 2-3 minutes.
- Step 4: Once cooked, remove the funnel cake from the oil and place it on a plate lined with paper towels to drain any excess oil. While still warm, generously dust with powdered sugar.
- Step 5: Serve the funnel cake warm, and enjoy it as is or with additional toppings like whipped cream, chocolate sauce, or fresh fruit.
Notes
Store leftover funnel cake in an airtight container at room temperature for up to 2 days. To reheat, pop them in the oven at 350°F (175°C) for a few minutes to regain their crispiness.
