  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic minced
  • 1 teaspoon ground ginger
For the Roasted Vegetables
  • 2 large sweet potatoes peeled and diced
  • 2 cups green beans trimmed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a small bowl, whisk together the honey, soy sauce, minced garlic, and ground ginger.
  3. Step 3: In a large mixing bowl, toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
  4. Step 4: Place the baking sheet in the preheated oven and roast the sweet potatoes for 20 minutes until they start to soften.
  5. Step 5: Season the chicken breasts with salt and pepper. Heat a large skillet over medium heat and add a splash of olive oil.
  6. Step 6: Once the skillet is hot, add the chicken breasts and sear for 3-4 minutes on each side until they are golden brown.
  7. Step 7: Pour the honey garlic sauce over the chicken and reduce the heat to low. Cook for an additional 5-7 minutes, or until the chicken is cooked through.
  8. Step 8: After 20 minutes, remove the baking sheet from the oven and add the trimmed green beans to the sweet potatoes. Toss to combine and return to the oven for an additional 15-20 minutes.
  9. Step 9: Serve the honey garlic chicken alongside the roasted sweet potatoes and green beans, garnished with chopped parsley.
