- Step 1: In a bowl, combine the honey, lime juice, olive oil, garlic powder, salt, and pepper. Mix well to create a marinade.
- Step 2: Place the chicken breasts in a resealable bag or a shallow dish. Pour the marinade over the chicken, making sure it’s well-coated. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- Step 3: Preheat a grill or skillet over medium heat. Remove the chicken from the marinade and discard the marinade. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for a few minutes before slicing.
- Step 4: In a serving dish, layer the cooked brown rice as the base. Top with sliced chicken, avocado slices, cherry tomatoes, and fresh cilantro.
- Step 5: Drizzle with additional lime juice if desired, and serve with lime wedges on the side.
Notes
If you have leftovers, store them in an airtight container in the refrigerator. It should last about 3-4 days. Just remember, the avocado may brown a bit, so it's best to add that fresh before serving.
