Ingredients
  

For the Soup
  • 10 cloves garlic peeled and sliced
  • 1 medium onion chopped
  • 2 tbsp olive oil
  • 6 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup cooked rice optional
  • 1 cup corn kernels fresh or frozen
  • 1 cup black beans rinsed and drained
  • 1/4 cup fresh cilantro chopped
  • 1 juice lime
  • Avocado slices for garnish
  • Tortilla strips for garnish

Method
 

  1. Step 1: In a large pot, heat the olive oil over medium heat. Add the sliced garlic and chopped onion. Sauté for about 4-5 minutes, or until the onion is translucent and the garlic is fragrant, but not browned.
  2. Step 2: Stir in the ground cumin and smoked paprika. Cook for another minute to toast the spices, stirring frequently.
  3. Step 3: Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 15 minutes to allow the flavors to meld.
  4. Step 4: Add the corn kernels and black beans to the pot. If using, stir in the cooked rice. Simmer for an additional 5 minutes until heated through.
  5. Step 5: Taste the soup and season with salt and pepper as needed.
  6. Step 6: Remove the pot from heat and stir in the lime juice and chopped cilantro.
  7. Step 7: Ladle the soup into bowls and garnish with avocado slices and tortilla strips on top.

Notes

Store in an airtight container in the fridge for up to 5 days. This soup also freezes well! Just make sure to leave out the avocado and tortilla strips until you are ready to serve.
