Method
- Step 1: In a large pot of salted boiling water, cook the bowtie pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- Step 2: In the last 3 minutes of cooking the pasta, add the broccoli florets to the pot. Drain the pasta and broccoli together and set aside.
- Step 3: In a large skillet over medium-high heat, melt the cowboy butter. Add the chicken pieces and season them with garlic powder, onion powder, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 6-8 minutes.
- Step 4: Reduce the heat to medium. Add the cooked pasta and broccoli to the skillet with the chicken. Pour in the lemon juice and zest, and toss everything together. If the mixture seems dry, add a bit of the reserved pasta water until desired consistency is reached.
- Step 5: Remove from heat and garnish with fresh parsley and grated Parmesan cheese if desired. Serve immediately and enjoy this delicious meal!
Notes
Make sure to store leftovers in an airtight container in the fridge, where they'll last for up to 3 days. You can reheat it on the stove with a splash of water or in the microwave for a quick meal. If you want to keep it longer, consider freezing it! Just be sure to store it in a freezer-safe container, and it should stay good for about 2 months.
