Ingredients
  

  • 1 cup Cornmeal This gives the nuggets that classic cornbread texture.

  • 1 cup Corn kernels Fresh, frozen, or canned works perfectly.
  • 1-2 Jalapeños Finely chopped; remove seeds for a milder flavor.
  • 1/2 cup Shredded cheddar cheese Because cheese makes everything better!
  • Oil for frying Choose a neutral oil with a high smoke point.

Method
 

  1. Step 1: In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and cayenne pepper (if using). Mix well until blended.
  2. Step 2: In another bowl, whisk together the buttermilk and eggs. Pour this mixture into the dry ingredients and stir until just combined. Be careful not to overmix!
  3. Step 3: Fold in the corn kernels, chopped jalapeños, and shredded cheddar cheese until evenly distributed throughout the batter.
  4. Step 4: In a large skillet or deep fryer, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C). A kitchen thermometer comes in handy here!
  5. Step 5: Carefully drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy.
  6. Step 6: Use a slotted spoon to remove the nuggets from the oil and place them on paper towels to drain excess oil. Serve them warm with your favorite dipping sauce.

Notes

Leftover nuggets can be stored in an airtight container in the refrigerator for up to three days. Reheat them in the oven to maintain their crispiness—just 10 minutes at 350°F (175°C) should do the trick.
