Keto Philly Cheesesteak Roll Ups

Ingredients
  

For the Roll Ups
  • 1 lb ribeye steak thinly sliced
  • 1 tbsp olive oil
  • 1 medium bell pepper sliced
  • 1 medium onion sliced
  • 4 oz cream cheese softened
  • 1 cup shredded provolone cheese
  • 1 tsp garlic powder
Salt and Pepper
  • 8 slices deli-style low-carb turkey or ham
  • Fresh parsley

Method
 

  1. Step 1: In a large skillet, heat olive oil over medium heat. Add sliced bell peppers and onions. Sauté until soft and slightly caramelized, about 5-7 minutes. Season with salt, pepper, and garlic powder. Remove from skillet and set aside.
  2. Step 2: In the same skillet, add the thinly sliced ribeye steak. Cook for about 2-3 minutes until browned, stirring frequently. Remove from heat.
  3. Step 3: Lay out the slices of turkey or ham on a clean surface. Spread a layer of cream cheese over each slice.
  4. Step 4: Place a portion of the cooked steak and sautéed vegetables on top of the cream cheese.
  5. Step 5: Carefully roll each slice tightly, starting from one end, to form a roll-up. Secure with toothpicks if necessary.
  6. Step 6: Preheat your oven to 375°F (190°C). Place the roll-ups in a baking dish and sprinkle shredded provolone cheese on top.
  7. Step 7: Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  8. Step 8: Remove from the oven, garnish with fresh parsley, and serve warm.

Notes

If you have leftovers, store them in an airtight container in the fridge for about 3-4 days. You can also prepare them a day in advance and bake them just before serving.
