- Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Mix in the buttermilk, lemon zest, and lemon juice until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Step 3: In a separate bowl, combine the flour, brown sugar, and cinnamon. Pour in the melted butter and mix until crumbly.
- Step 4: Pour the cake batter into the prepared cake pan and spread it evenly. Sprinkle the crumb topping over the batter.
- Step 5: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Step 6: While the cake is baking, whisk together the powdered sugar and lemon juice in a small bowl until smooth. Adjust the consistency with more lemon juice if needed.
- Step 7: Once the cake is done, remove it from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Drizzle the glaze over the cooled cake.
- Step 8: Slice and enjoy your delicious Lemon Crumb Cake!
