Ingredients
  

For the Mexican Street Corn
  • 4 ears fresh corn husked
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 cup crumbled cotija cheese
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tbsp lime juice
For Garnish
  • Fresh cilantro, chopped
  • Lime wedges

Method
 

  1. Step 1: First, preheat your grill to medium-high heat. This is where the magic happens!
  2. Step 2: Next, grill the corn for about 10-15 minutes, turning occasionally until it's nicely charred and cooked through. You want those beautiful grill marks!
  3. Step 3: While the corn is grilling, grab a mixing bowl and combine the mayonnaise, sour cream, cotija cheese, chili powder, garlic powder, and lime juice. Mix it well until it's nice and smooth.
  4. Step 4: Once the corn is done, take it off the grill and let it cool slightly. You don’t want to burn your hands!
  5. Step 5: Now, brush the corn with your creamy mayonnaise mixture, making sure to coat it evenly. This is where the flavor really comes in.
  6. Step 6: If you're feeling extra indulgent, sprinkle more cotija cheese and chili powder on top for that extra oomph!
  7. Step 7: Finally, garnish with chopped cilantro and serve with lime wedges on the side. You're ready to enjoy!

Notes

If you happen to have leftovers, store the corn in an airtight container in the fridge. It should last about 2-3 days.
