Ingredients
  

Zucchini
  • 4 medium zucchinis Fresh and firm zucchinis are best for roasting.
  • 2 tbsp olive oil This adds flavor and helps the zucchini roast nicely.
  • 1 tsp garlic powder A must for a savory kick!
  • 1 tsp onion powder It enhances the overall flavor.
  • 1 tsp Italian seasoning This brings a lovely herby aroma.

Method
 

  1. Step 1: Preheat your oven to 425°F (220°C).
  2. Step 2: Wash the zucchinis and cut off the ends. Slice them into 1/4-inch thick rounds or half-moons.
  3. Step 3: In a large bowl, combine the sliced zucchinis, olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss until the zucchini is evenly coated.
  4. Step 4: Spread the seasoned zucchini slices in a single layer on a baking sheet lined with parchment paper.
  5. Step 5: Roast in the preheated oven for about 20-25 minutes, or until the zucchinis are tender and lightly browned. Flip them halfway through for even cooking.
  6. Step 6: If desired, sprinkle grated Parmesan cheese on top during the last 5 minutes of roasting.
  7. Step 7: Remove from the oven and let cool slightly. Garnish with fresh parsley if desired.
  8. Step 8: Serve warm as a side dish or enjoy as a healthy snack!

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. You can reheat them in the oven for a few minutes to regain their crispy texture!
