Ingredients
  

For the Zucchini Stir Fry
  • 1 block firm tofu pressed and cut into bite-sized cubes
  • 2 medium zucchinis
  • 1 count bell pepper
  • 1 cup snap peas
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp cornstarch optional, for thickening the sauce
For Serving
  • Cooked rice or quinoa
  • Sesame seeds for garnish

Method
 

  1. Step 1: Cut the pressed tofu into bite-sized cubes. Heat olive oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden and crispy on all sides, about 8-10 minutes. Remove from the skillet and set aside.
  2. Step 2: In the same skillet, add the sesame oil. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  3. Step 3: Add the sliced zucchinis and bell pepper to the skillet. Stir-fry for about 4-5 minutes until the vegetables are tender but still crisp.
  4. Step 4: Toss in the snap peas and continue to stir-fry for another 2-3 minutes.
  5. Step 5: Return the cooked tofu to the skillet. In a small bowl, mix the soy sauce (or tamari) and cornstarch (if using). Pour this mixture over the tofu and vegetables. Stir well to combine, cooking for an additional 2 minutes until everything is heated through.
  6. Step 6: Season with salt and pepper to taste. Remove from heat and garnish with sesame seeds. Serve hot over cooked rice or quinoa.

Notes

This stir fry is best enjoyed fresh, but if you have leftovers, you can store them in an airtight container in the fridge for up to 3 days. Just reheat in a skillet or microwave, and it'll be as delicious as the first day!
