  • 1 lb chicken breast diced

  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese for creaminess

  • 1 small onion diced
  • 3 cloves garlic minced
  • Salt and pepper to taste

Method
 

  1. Step 1: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and season with Cajun seasoning, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. Step 2: In the same skillet, add the diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Step 3: Stir in the rice and cook for 1-2 minutes, allowing it to toast slightly.
  4. Step 4: Pour in the chicken broth and heavy cream, stirring well to combine. Bring the mixture to a simmer.
