Ingredients
  

For the Stir-Fried Shrimp
  • 1 lb shrimp peeled and deveined
  • 1 bunch asparagus trimmed and cut into 2-inch pieces
  • 8 oz mushrooms sliced
  • 3 tbsp vegetable oil
  • 3 cloves garlic minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
For Serving
  • cooked rice

Method
 

  1. Step 1: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
  2. Step 2: Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Step 3: Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove from the skillet and set aside.
  4. Step 4: In the same skillet, add the remaining tablespoon of vegetable oil. Add the asparagus and mushrooms, and stir-fry for 4-5 minutes until tender-crisp.
  5. Step 5: Return the shrimp to the skillet and add the soy sauce, oyster sauce, and sesame oil. Stir well to combine and heat everything through.
  6. Step 6: Season with salt and pepper to taste.
  7. Step 7: Serve hot over cooked rice.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days.
