- Step 1: In a large mixing bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy, then gently fold in the whipped cream until well combined. Set aside.
- Step 2: Spread a thin layer of berry sauce on the bottom of a 9x13 inch baking dish. Place a layer of no-bake lasagna noodles on top of the sauce. Spread half of the cream mixture over the noodles and evenly distribute half of the mixed berries over the cream layer. Repeat the layering process.
- Step 3: Top with a final layer of lasagna noodles and spread any remaining berry sauce over the top.
- Step 4: Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the lasagna to set.
- Step 5: Once chilled, slice the dessert lasagna into squares and garnish with fresh mint leaves if desired. Enjoy!
Notes
This dessert is best enjoyed fresh but can be stored in the fridge for up to 3 days. Just cover it tightly with plastic wrap to keep it fresh.
