- Step 1: First things first, put on some gloves to protect your hands! Slice the jalapeños into rings and set them aside.
- Step 2: In a large saucepan, combine the sugar, apple cider vinegar, garlic powder, onion powder, turmeric, black pepper, cayenne pepper (if using), and salt. Stir it over medium heat until the sugar dissolves completely.
- Step 3: Once your syrup is boiling, toss in the sliced jalapeños. Give it a good stir to ensure they’re well coated in that syrupy goodness.
- Step 4: Reduce the heat to medium-low. Let the mixture simmer for about 10 minutes—this softens the jalapeños and allows them to soak up the flavors.
- Step 5: While your jalapeños are cooking, sterilize your canning jars by placing them in boiling water.
- Step 6: Using a slotted spoon, pack the jalapeño slices into your sterilized jars. Pour the syrup over the top, leaving about 1/2 inch of headspace.
- Step 7: Wipe the rims of the jars with a clean cloth and place the lids on. Screw on the metal bands until they're fingertip tight.
- Step 8: Process your jars in a boiling water bath for 10-15 minutes to ensure they seal properly.
- Step 9: After processing, let the jars cool completely on a clean towel. Check the lids to make sure they’ve sealed properly (they shouldn't pop back when pressed).
- Step 10: Allow the cowboy candy to sit for at least 24 hours before you dive in. This lets the flavors meld beautifully.
Notes
Store your Texas Cowboy Candy in a cool, dark place. If sealed properly, it can last for up to a year. Once opened, keep it in the refrigerator, where it will stay fresh for several weeks.
