Ingredients
  

For the Pasta Salad
  • 8 oz elbow macaroni
  • 1 cup corn grilled or canned
  • 1 cup cherry tomatoes
  • 1/2 cup red onion finely chopped
  • 1/2 cup cilantro chopped
  • 1 cup Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper
  • 1/2 cup crumbled feta cheese optional

Method
 

  1. Step 1: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. Step 2: While the pasta is cooking, chop up your corn, cherry tomatoes, red onion, and cilantro.
  3. Step 3: In a separate bowl, mix together the Greek yogurt, lime juice, chili powder, cumin, salt, and pepper.
  4. Step 4: In a large mixing bowl, combine the cooled pasta, corn, cherry tomatoes, red onion, and cilantro. Pour the dressing over the pasta mixture and toss until everything is evenly coated.
  5. Step 5: If you're using it, sprinkle crumbled feta cheese over the top and gently mix.
  6. Step 6: Refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld. Serve chilled and enjoy!

Notes

Store any leftover pasta salad in an airtight container in the fridge. It will keep well for about 3 to 5 days.
