- Step 1: Preheat your oven to 425°F (220°C).
- Step 2: In a small bowl, whisk together honey, olive oil, minced garlic, rosemary, thyme, Dijon mustard, salt, and pepper until well combined.
- Step 3: Pat the chicken dry with paper towels and place it in a large roasting tray.
- Step 4: Pour the honey-herb mixture over the chicken, ensuring it is evenly coated.
- Step 5: Arrange the chopped carrots and quartered onion around the chicken. Place lemon slices on top of the chicken and around the vegetables.
- Step 6: Pour the chicken broth into the bottom of the tray to keep the chicken moist.
- Step 7: Roast for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). Baste halfway through cooking.
- Step 8: Let the chicken rest for 10-15 minutes before carving.
- Step 9: Carve the chicken and serve with the roasted vegetables, drizzled with the pan juices.
