Ingredients
  

For the Pasta Salad
  • 12 oz pasta such as rotini or penne
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell peppers diced (red, yellow, or green)
  • 1/2 cup red onion finely chopped
  • 1/2 cup black olives sliced
  • 1/2 cup pepperoncini sliced
  • 1 cup mozzarella cheese cubed or mini mozzarella balls
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup fresh basil leaves chopped
  • 1/2 cup Italian dressing to taste
  • Salt and pepper to taste

Method
 

  1. Step 1: Start by cooking the pasta according to the package instructions. Once it's al dente, drain it and rinse under cold water to cool it down.
  2. Step 2: In a large mixing bowl, combine the cooled pasta with cherry tomatoes, cucumber, bell peppers, red onion, black olives, pepperoncini, mozzarella cheese, Parmesan cheese, and basil.
  3. Step 3: Drizzle the Italian dressing over the salad and gently toss to combine all the ingredients.
  4. Step 4: Season with salt and pepper to taste and give it another gentle toss!
  5. Step 5: For the best flavor, refrigerate the salad for at least 30 minutes before serving.

Notes

To store your pasta salad, keep it in an airtight container in the refrigerator. It’s best enjoyed within 3-4 days.
