Ingredients
  

For the Steak Fajitas
  • 1 lb flank steak sliced
  • 1 bell pepper any color
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
For the Tortillas
  • 8 small flour or corn tortillas for wrapping fajitas
For the Fries
  • 2 large russet potatoes cut into fries
  • 2 tbsp olive oil
For the Fresh Salad
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes
  • 1/4 cup cilantro
  • 1 lime juice
  • 2 tbsp olive oil for dressing

Method
 

  1. Step 1: In a bowl, combine olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Add the sliced flank steak and toss to coat. Let it marinate for at least 20 minutes to soak in all those flavors.
  2. Step 2: In a large skillet over medium-high heat, add the marinated steak and cook for about 5-7 minutes until browned and cooked to your desired doneness. Remove and set aside.
  3. Step 3: In the same skillet, add the sliced bell pepper and onion. Sauté for about 5 minutes until they are tender. Combine with the steak in the skillet and mix well.
  4. Step 4: Preheat the oven to 425°F (220°C). Toss the cut potatoes with olive oil, salt, pepper, and any additional seasonings like paprika or garlic powder. Spread them in a single layer on a baking sheet.
  5. Step 5: Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  6. Step 6: In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, red onion, and cilantro. In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Drizzle over the salad and toss to combine.
  7. Step 7: Warm the tortillas in a dry skillet or microwave until soft. Serve the steak fajitas on a tortilla, top with fresh salad, and add fries on the side.

Notes
