- Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
- Step 2: In a large bowl, combine the grated zucchini, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Mix well until everything is combined.
- Step 3: In another bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.
- Step 4: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Remember, do not overmix!
- Step 5: If you like, fold in the chopped walnuts or pecans and raisins or chocolate chips for extra flavor and texture.
- Step 6: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Step 7: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Step 8: Remove from the oven and let the bread cool in the pan for about 10 minutes. Then, transfer the bread to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 3 days. For longer storage, wrap tightly in plastic wrap and keep in the freezer for up to 3 months.
